INGREDIENTS

  • 160g GF Samwa All-purpose flour
  • 2Eggs
  • 40ml oil
  • 110ml milk
  • 60g Sugar
  • 10g Baking powder
  • 40ml lemon juice
  • Zest of 1 lemon, grated (appx 10g)
  • Extra sugar for coating

INSTRUCTIONS

  1. Preheat oven to 190°C & grease the doughnut mould
  2. Beat the eggs & add milk & oil & whisk until we'll combined & fluffy.
  3. Mix the Samwa all-purpose flour with sugar & baking powder
  4. Combine the wet & dry ingredients & then fold in the lemon juice
  5. Pipe the batter into the mould & Bake for 10-12 min
  6. Combine the grated lemon zest with the sugar & sprinkle on top of the Doughnuts while hot

INGREDIENTS

  • 100g GF Samwa Pumpkin flour
  • 90g GF Samwa Corn starch
  • 3 g GF Samwa Xanthan gum
  • 150g sugar
  • 2.5g Baking Soda
  • 2g Pumpkin pie spice
  • 3g Cinnamon powder
  • 1.5g Salt
  • 50ml Oil
  • 30ml milk
  • 8ml Vanilla essence
  • 3large eggs

CREAM CHEESE FROSTING

  • 510g soft cream cheese
  • 85g Softened unsalted butter
  • 150g icing sugar
  • 8ml Vanilla essence

INSTRUCTIONS

  1. Beat the eggs &sugar until fluffy, then add oil, milk & Vanilla essence & mix until well combined
  2. Mix all the dry ingredients
  3. Combine the wet & dry ingredients
  4. Preheat oven to 190°C & line up a 15"×10" pan with parchment paper that extends to the edges & grease the parchment paper
  5. Spread the batter evenly into the prepared pan
  6. Bake for about 15min
  7. Once the cake is cooling, prepare the cream cheese frosting

CHEESE FROSTING

  1. In a bowl, beat the butter, cream cheese & vanilla essence until smooth
  2. Add the icing sugar & mix again until soft & set aside
  3. Once the cake has cooled, spread the cream cheese frosting over the cake.
  4. You can garnish with fresh strawberries
  5. Refrigerate for about 1 hr before cutting & serving

  • 750g GF Samwa All-purpose flour
  • 300g Sugar
  • 10g Cardamom powder
  • 18g Instant yeast
  • 10g Baking powder
  • 500ml Coconut milk
  • 50ml melted Coconut oil
  • Oil for deep frying

INSTRUCTIONS

  1. Mix all the dry ingredients
  2. Add the melted Coconut oil
  3. Add the Coconut milk & knead until soft
  4. Make balls
  5. Roll each ball on parchment paper & using a mould or plate, make a perfect circle
  6. Cut the circles into 4 quarters
  7. Deep fry on both sides until golden brown
  8. Serve with mbaazi( pigeon peas) & tea
